most stuff you just dump in the override folder. Documents/bioware/dragonageorigins/override is the path, I believe.
Some you will need the modmanager, though. Anything zipped or in .damod format, usually. Get it here: http://www.dragonagenexus.com/downloads/file.php?id=277
